I enjoyed this book and wrote down several recipes. In some recipes the author substituted a well known ingredient like bulgur for quinoa and created something new with a minor twist. In other cases the author provided several recipes for a certain type of dish (several recipes for falafel or for stuffed grape leaves for example). In normal middle east cookbooks most of these variations are suppressed in favor of meat dishes. I also liked the fact that this book did not try to emulate "meat" dishes by resorting to the list of unusual vegan/vegetarian substitutes found in other vegan/vegetarian cooking books.
